Produce heaven

A lady from my church came in a large bag of squash. She had summer, butternut, and one little acorn squash.
She the squash for everyone to pick what they wanted. Well, nobody took any and the bag was still on the table. So I took it all (insert evil maniacal laugh here). Not really she told me to take what was left.

I have never had an acorn squash before and I really did not know how to cook it so I went on Tasty Kitchen and found some yummy recipes. This is the one I stuck with. The little green guy never saw it coming.
Slicing was a little difficult because this puppy was hard. Acorn squash are firm.
So start with the tip of the knife in and work your way across to split the squash in half.

With a spoon scoop out all the insides. I saved the seeds so that I may one day have my own acorn squash. Maybe not.
Sprinkle in a little salt. Put in a dab of butter. Everything is better with butter. Then sprinkle in some brown sugar.
Pour in enough water to cover the bottom of the cookie sheet. Don't you like my cup. My son let me borrow it. After I pulled it from his hands. That's good parenting.
Oh I forgot to tell you that I scored the inside of the squash. You can barely see the lines here. Cover the pan with foil and leave a small vent for some steam to escape.
Put in the oven for 30 minutes, covered. Then pull it out and uncover it. Put it back in for another 30 minutes or until soft. Take out you squash and use a spoon to bast the squash with the butter and sugar juice.
Bad picture. Sorry. My lighting was going away and the moon was not in the 7th house and the planets were not exactly aligned.   Put the squash back in the oven on Broil this time and leave for 4-5 minutes. Don't walk away. Burned squash will not taste good.
I put my squash on a pretty plate. My favorite is my Fiesta Ware. This color is Shamrock.
ooooo......  that is making my mouth water. Yum.  You can eat it just like this. That is not good enough for me.  I had some leftover chicken and rice with peas. So I heated it and piled it on top and all around.
This was all for me. The husband was not here and there was no way my son would have eaten this. I tried to get him to taste it and he ran screaming from the room. He is just like his Daddy. Eats like him too.
